Residents looking for a night of fine dining will soon have a fresh option with a new restaurant set to open on Main Street. Brothers James and Dean Katsiris, who have moved to town from Saskatoon, are renovating the former Royal Chinese Restaurant in the Royal Hotel into an upper end eatery. "It will have a totally different look, everything will be different," said James. "New colours, a new entrance, new everything." The brothers hope to open Adelphia Grill and Seafood House this coming Thursday, January 29. The name pays homage to the brothers' heritage, as "Adelphia" is the Greek word for brothers. Major renovations include a new front entrance and a picture window looking out onto Main Street. The brothers have also applied to install a canopy outside their restaurant. James commented that the considerable Newfoundlander population in the local area helped prompt the brothers to prepare a sizable seafood menu. The brothers plan to start hiring their staff next week and have already received about 40 resumes. The men have no shortage of experience in the restaurant business. Their father, Nick, and three uncles own four restaurants in Saskatoon, and James and Dean have spent years employed in the industry. They became aware of the available restaurant location from a local man who is friends with their father. The Royal Chinese Restaurant closed last month. James said the restaurant will likely open between 10 and 11 a.m. and close at 10 or 11 p.m. Take out will be offered. "We can always change how we operate according to what people want," said James.
