Now that hunting season is all wrapped up and everyone has their freezers full of moose, elk, deer or whatever you bagged, here is a Newfoundland recipe you might want to try. "Braised Moose in Beer" 3 lbs moose meat 6 tbsp oil Salt and pepper 1 lb. Thinly sliced onions 2 tbsp. Flour 2 1?2 cups strong beer 1?2 cup canned beef broth 1 tbsp. White vinegar 1 tsp brown sugar 1 tsp thyme 2 tbsp. Chopped parsley 1?2 cup chopped celery 1 bay leaf Cut the moose into bite-sized pieces and season lightly with salt and pepper. Brown the moose pieces a few at a time in hot oil. Take moose out and set aside. Reduce heat to moderate. Fry onions until brown. Now, layer moose and onions in a casserole dish with a lid. Pour the beer into the frying pan and scrape up all the browned bits as the beer heats. Mix the broth and flour together with a whisk and slowly add to the pan, stirring as it thickens. Add the rest of the ingredients. Pour this mixture over the moose and onions. Cover and bake at 325F for 1 1?2 hours. Serve with rice or potatoes.
