Banana Cranberry Bread We always have leftover cranberry sauce after Thanksgiving, this recipe is very moist and delicious. Prep Time: approx. 15 Minutes. Cook Time: approx. 1 Hour . Ready in: approx. 1 Hour 30 Minutes. Makes 2 - 9x5 inch loaves (24 servings). 2 1/2 cups white sugar 1 cup shortening 3 eggs 3 mashed bananas 1 cup cranberry sauce 1/2 cup milk 1 teaspoon vanilla extract 4 cups all-purpose flour 1 1/2 teaspoons baking soda 1 1/2 teaspoons baking powder 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 cup chopped walnuts Directions 1Ð Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. 2Ð In a large bowl, cream together the sugar and shortening until light and fluffy. Beat in eggs, and mix in bananas, cranberry sauce, milk, and vanilla. In a separate bowl, mix together flour, baking soda, baking powder, cinnamon, and nutmeg. Gradually blend flour mixture into the banana mixture. Fold in walnuts. Pour into the prepared loaf pans. 3Ð Bake for 50 to 60 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack, and cool completely. Broccoli Casserole This is a family favorite for holidays and get-togethers! This recipe is so cheesy and delicious! Prep Time: approx. 15 Minutes. Cook Time: approx. 40 Minutes. Ready in: approx. 55 Minutes. Makes 10 servings. 4 heads fresh broccoli, chopped 1 1/2 cups shredded American cheese 1 (10.75 ounce) can condensed cream of mushroom soup 1 1/2 teaspoons salt 2 teaspoons ground black pepper 3 tablespoons butter 2 cups crushed, seasoned croutons Directions 1Ð Preheat oven to 350 degrees F (175 degrees C). 2Ð Bring a pot of lightly salted water to a boil. Cook broccoli in the boiling water for 1 minute. Drain, and set aside. 3Ð In a saucepan over medium heat, mix the cheese, cream of mushroom soup, salt, and pepper. Stir until cheese is melted. Add the broccoli, stirring to coat. Transfer the mixture to a 9x13 inch baking dish. 4Ð In a separate saucepan, melt the butter over medium heat. Mix in the croutons, and sprinkle over the broccoli mixture. 5Ð Bake 30 minutes in the preheated oven, until the topping is browned and broccoli is tender. Pumpkin Raisin Cookies A wonderful cakelike pumpkin cookie that fills your kitchen with a heavenly smell and uses up leftover pumpkin. Makes 3 to 4 dozen (6 servings). 1/2 cup shortening 1 cup packed brown sugar 1 egg 1 teaspoon vanilla extract 1 cup solid pack pumpkin puree 2 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 2 1/2 teaspoons pumpkin pie spice 1 teaspoon ground cinnamon 1/2 cup chopped walnuts 1 cup raisins 1 cup confectioners' sugar 2 tablespoons warm water 1/2 teaspoon ground cinnamon Directions 1Ð Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2Ð In a medium bowl, cream the shortening and sugar until smooth. Add the egg, and vanilla; mix until fluffy. Stir in the pumpkin. Sift together the flour, baking soda, salt, pumpkin pie spice, and cinnamon; stir into the pumpkin mixture. Finally, stir in the raisins and walnuts. 3Ð Drop cookie dough by heaping spoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven, cookies should be light brown around the edges. Brush with the spice glaze, and transfer to racks to cool. 4Ð To make the spice glaze, mix confectioners' sugar with 2 tablespoons of warm water until there are no more lumps. Stir in the 1/2 teaspoon of cinnamon. If the glaze is too thick, add a little more water. Turkey Salad This recipe can be made with leftover turkey, or a turkey breast. The cook time will not include the baking of the turkey, just making the salad. Keeping the salad somewhat chunky is part of what makes it good. No food processors, please. Serve this on a bed of red leaf lettuce and garnish with red and green seedless grapes and pecan halves. Cubed jellied cranberry sauce is very good with it, so place that on the plate around the salad. Serve with assorted crackers or breads. Prep Time: approx. 10 Minutes. Cook Time: approx. 10 Minutes. Ready in: approx. 3 Hours 20 Minutes. Makes 10 servings. 6 eggs 6 cups cooked turkey meat 1 (16 ounce) jar sweet pickles, chopped 1 1/2 (10 ounce) jars mustard-mayonnaise blend 3/4 cup mayonnaise Directions 1Ð Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop. 2Ð In a large bowl, thoroughly mix the eggs, turkey, pickles, prepared sandwich and salad sauce and mayonnaise. Chill in the refrigerator approximately 3 hours before serving.
