Holland is hoping its new tuber will be be on the Atkins, the Zone and the South Beach menus early next year. Company scientists say they never meant to develop a low carbohydrate potato. Instead, they were looking for a good-tasting, yellow-fleshed, smooth-skinned potato that would appeal to Europeans.
